These are one of my family's favorite cookies. They take a long time to make, but are so very worth it!

Walnut Cups (although the technical name is Tassies)


INGREDIENTS:
2 cups butter
12 oz cream cheese
4 cups all-purpose flour
3 eggs
2 1/2 cups packed brown sugar
3 tablespoons melted butter
1/2 teaspoon vanilla extract
1 pinch salt
1 1/2 cups chopped walnuts
DIRECTIONS:
1. Preheat the oven to 350 degrees F
2. In a medium bowl, stir together the butter and cream cheese until well blended. Add flour, 1 cup at a time, until the mixture forms a smooth dough. Chill at least one hour. Roll into small balls, and press into the bottoms and sides of tart pans or mini muffin pans.
3. In another bowl, mix together the eggs, brown sugar, butter, vanilla, and salt. Use a spoon to fill each of the crusts 2/3 full with the filling mixture. Sprinkle with chopped walnuts.
4. Bake for 15 to 18 minutes in the preheated oven, until shell is light brown, and the filling has puffed up. Cool, and carefully remove from pans.

I do have a funny story to share about these. I have been cooking them since I was a teenager. Don't do the math, just go with "it's been a long time."
I have these down to a science. In fact, I would let my family eat the broken ones, but then they would be disappointed when none of them broke. I made these yesterday and I cannot tell you what a disaster they were. The filling leaked out of them, half of them were stuck in the trays. They still tasted good. (We had a lot of broken ones!) I have never had this happen before and I hope it never happens again.

Oh my gosh, those sound sooooooo good Chris!

Must scrounge through my recipes to find some to share.

And yes! Virtual cookies are the best kind! We can all indulge as much as we like and never show any ill effects
